Recipe: Oysters in Coconut Milk with Chili
Ingredients:
500g fresh oysters
400ml coconut milk
2-3 chili peppers (depending on desired spiciness)
2 garlic cloves
1 onion
1 tablespoon soy sauce
1 teaspoon lime juice
Olive oil
Fresh coriander (for garnish)
Preparation:
Chop the onion, garlic and chili.
Fry the onion and garlic in olive oil until golden.
Add the chili and fry for another 1 minute.
Add the oysters and fry until they are soft.
Add coconut milk, soy sauce and lime juice.
Simmer for 5-10 minutes until the sauce thickens.
Serve, garnished with fresh coriander.
