Oyster mushrooms with avocado and grapefruit
Mushrooms:
500 g of oyster mushrooms
Vegetables:
2 cloves of garlic
1 tbsp. ginger root
1 jalapeño pepper
2 avocados
4-5 circles
2 tbsp. dill
2 tablespoons paprika
Liquids:
1 cup of lemon juice
4 tbsp. oil
Additionally:
3 grapefruits
Salt
Pepper
Cut the stems of the oyster mushrooms down to the caps. If the caps are very large, cut them lengthwise.
In a bowl, mix lemon juice, minced garlic, ginger root, jalapeno, salt and oil. Add oyster mushrooms, stir and set aside for 30 minutes at room temperature.
Add avocado, grapefruit, white parts of onion and dill. Stir and set aside for 30 minutes at room temperature. You can then add salt and pepper to taste.
Top with chopped peppers and serve.
